One Pot Chicken and Shrimp Gumbo

Ingredients

  • 3 tablespoon svegetable oil
  • 1/3 cup all-purpose flour
  • 2 red bell peppersribs and seeds removed, chopped
  • 1 medium onionfinely chopped
  • 2 clove sgarlicminced
  • 1 teaspoon dried oregano
  • 1 tablespoon of tomato paste
  • 4 cup schicken broth
  • 1 tablespoon hot sauceoptional
  • Coarse salt and ground pepper
  • 1 10 ounce package of frozen slice d okra
  • 8 ounce ssmoked pre-cooked sausage such as andouille or kielbasacut into 1/2 inch thick slice s
  • 4 cup sof shredded chicken
  • 1/2 pound of large shrimp

Instructions

  1. In a large Dutch oven or heavy bottomed pot, heat the oil over medium.
  2. Add flour, and cook, whisking constantly, until pale golden, 5 to 7 minutes.
  3. Stir in bell peppers, onion, garlic, and oregano; season with salt and pepper to taste.
  4. Cook, stirring occasionally, until vegetables have started to soften, 5 to 7 minutes.
  5. Add the chicken broth, tomato paste and hot sauce if using.
  6. Stir in the okra, chicken and sausage. Bring to a boil, then turn heat down to medium. Stir in the shrimp and cook for 2 to 3 minutes or until shrimp are pink and cooked through. Season with salt and pepper to taste and serve.
