Instructions
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Whisk mochiko, sugar, pudding mix, and baking powder together in a bowl until combined. Whisk in milk until smooth with no lumps. Whisk in melted butter, then eggs, then lemon extract; pour into the prepared baking dish.
Bake in the preheated oven until a toothpick inserted in center comes out clean, about 1 hour.
