Big Easy Shrimp Rice

Ingredients

  • 1/2 cup butter
  • cup diced onion
  • cup diced bell pepper
  • 1/2 cup minced green onion
  • 1/2 pound sshrimp, peeled and deveined
  • (10.5 ounce) can cream of mushroom soup
  • (10.5 ounce) can condensed French onion soup
  • (10 ounce) can diced tomatoes with green chiles
  • cup swhite rice
  • tablespoon salt (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Melt butter in a large saucepan over medium heat. Add onion, bell pepper, and green onion; cook until tender, about 10 minutes. Stir in shrimp, condensed soups, and tomatoes with green chiles; bring to a boil.
  3. Off heat, stir in rice; season with salt. Pour shrimp rice mixture into a baking dish; cover tightly with aluminum foil.
  4. Bake in the preheated oven for 30 minutes. Remove foil, stir, and bake until bubbling, about 30 minutes more.
