Lemon Mug Cake

Lemon Mug Cake

Ingredients

  • 1/2 cup all-purpose flour
  • teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt
  • 1/3 cup milk
  • 1/3 cup light brown sugar
  • 1/2 teaspoon olive oil
  • small egg
  • 1/4 cup lemon juice
  • tablespoon lemon zest
  • butter for greasing

Instructions

  1. Combine flour, baking powder, baking soda, and salt in a small bowl. Whisk together milk, brown sugar, olive oil, egg, lemon juice, and lemon zest in a separate bowl. Add milk mixture to flour mixture and stir until batter is well combined, leaving a few lumps.
  2. Grease a large microwave safe mug with butter. Pour batter into the mug. Microwave for 3 minutes. Remove and leave to set for 5 minutes.

Tips

Sprinkle mug cake with a mixture of lemon zest and powdered sugar for extra flavor.
