Pumpkin Fudge 'OMG!' Bread

Ingredients

  • shortening for greasing
  • cup scake flour
  • (3.9 ounce) packageinstant chocolate fudge pudding mix
  • teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • (15 ounce) can pumpkin puree
  • 3/4 cup white sugar
  • 1/2 cup butter, softened
  • large egg
  • teaspoon vanilla extra ct
  • cup chopped walnuts (Optional)
  • cup mini ature semisweet chocolate chips (Optional)
  • tablespoon raw sugar, or to taste (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish or two 9x5 inch loaf pans with shortening.
  2. Whisk cake flour, pudding mix, cinnamon, baking soda, baking powder, salt, and nutmeg together in a bowl.
  3. Beat pumpkin, white sugar, butter, egg, and vanilla extract together in a separate bowl using an electric mixer until smooth.
  4. Slowly spoon flour mixture into pumpkin mixture and mix until batter is smooth; stir in walnuts and chocolate chips.
  5. Spoon batter into the prepared dish and sprinkle raw sugar over batter.
  6. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 45 to 55 minutes.
