Ingredients
- packageravioli, boiled for 1-2 minutes
- tbsp olive oil
- fresh lemon juice, from 1/2 lemon plus wedges for serving
- salt and pepper, to taste
- grated parmesan, optional for serving
- cup scooked chicken breast, diced (you can use rotisserie chicken for convenience)
- cup sromaine lettuce, chopped
- 1/2 cup Caesar dressing, store-bought or homemade
- 1/4 cup grated parmesan cheese
- fresh lemon juice, from 1/2 lemon
- croutons, optional
Instructions
- Boil ravioli for 1 2 minutes.
- Heat olive oil in a large skillet, add ravioli and toast 1 2 minutes per side, or until slightly brown and crispy. Squeeze lemon juice over before removing the ravioli from the pan and season with salt and pepper to taste.
- Into a medium sized bowl, combine diced chicken, romaine lettuce, Caesar dressing, grated parmesan cheese, and top with crusty croutons, if desired. Sprinkle over the lemon juice.
- Serve alongside the toasted ravioli with lemon wedges and extra parmesan cheese, if desired.
