Ingredients
- tablespoon vegetable oil
- ounce sbulk Italian sausage
- potato, peeled and diced
- 1/4 onion, chopped
- cup frozen mixed vegetables
- salt and pepper to taste
- 1/4 cup shredded Cheddar cheese
Instructions
- Heat oil in a large skillet over medium heat. Cook and stir sausage in hot oil until crumbly and just slightly pink, about 5 minutes. Add potato and onion; cook, stirring occasionally, until potatoes are tender and lightly browned, 10 to 15 minutes.
- Stir in frozen vegetables and cook until heated through. Season with salt and pepper. Sprinkle with Cheddar cheese to serve.
