- cup swhite sugar
- cup vegetable oil
- large eggs
- teaspoon vanilla extra ct, or more to taste
- cup sshredded zucchini
- cup sall-purpose flour
- tablespoon ground cinnamon
- teaspoon salt
- teaspoon baking soda
- teaspoon ground nutmeg
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground clove s
- 1/2 cup chopped walnuts (Optional)
- 1/2 cup raisins (Optional)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
- Beat sugar, oil, eggs, and vanilla extract together in a large bowl until smooth; fold in zucchini. Set aside.
- Whisk flour, cinnamon, salt, baking soda, nutmeg, baking powder, and cloves together in a separate bowl; gradually stir into sugar mixture until well combined. Fold in walnuts and raisins until incorporated. Divide batter between the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into centers comes out clean, about 50 minutes.
