Old-Fashioned Rhubarb Cake

Ingredients

  • 1/2 cup swhite sugar
  • 1/2 cup butter
  • large egg
  • teaspoon vanilla extra ct
  • cup sall-purpose flour
  • teaspoon baking soda
  • 1/4 teaspoon salt
  • cup buttermilk
  • cup srhubarb, chopped
  • tablespoon all-purpose flour
  • cup packed brown sugar
  • 1/4 cup butter
  • teaspoon sground cinnamon

Instructions

  2. Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy in color. Beat in egg and vanilla. Jen Causey / Food Stylist: Chelsea Zimmer / Prop Stylist: Lydia Pursell
  3. Sift 2 cups flour, baking soda, and salt together in a separate bowl; add alternately with buttermilk to butter mixture. Jen Causey / Food Stylist: Chelsea Zimmer / Prop Stylist: Lydia Pursell
  4. Toss rhubarb with 1 tablespoon flour, and stir into batter. Spoon batter into prepared baking pan and smooth the surface. Jen Causey / Food Stylist: Chelsea Zimmer / Prop Stylist: Lydia Pursell
