Savory Pumpkin Soup with Ham

Ingredients

  • tablespoon slight olive oil
  • onions, halved and slice d
  • clove sgarlic, peeled and crushed
  • cup splain pumpkin puree
  • quart schicken broth
  • cup swater
  • teaspoon ssalt
  • pinch ground black pepper
  • pinch celery seed
  • (12 fluid ounce) can evaporated milk
  • cup plain yogurt
  • ounce scooked slice d ham, minced

Instructions

  1. Heat olive oil in a large pot over medium high heat. Add onion and garlic; saute until tender, about 5 minutes. Add pumpkin, chicken broth, water, salt, pepper, and celery seed. Bring to a boil, stirring occasionally. Remove from heat; add milk and yogurt. Puree using an immersion blender until smooth. Add ham and let stand until heated through.

Tips

Substitute sour cream for the yogurt if desired.
