Avocado Salad with Lime Cilantro Dressing

Ingredients

  • avocados
  • 1/2 English cucumber
  • Roma tomatoes
  • 1/4 red onion
  • 1/4 teaspoon salt (plus more to taste)
  • freshly cracked black pepper
  • Cotija cheese (or Feta)
  • freshly chopped cilantro (for garnish)
  • 1/4 cup olive oil
  • juice of 1 lime (1 tablespoon+)
  • 1/2 jalapeno pepper
  • garlic clove
  • sprigscilantro
  • 1/2 teaspoon salt
  • freshly cracked black pepper

Instructions

  1. Give the cucumber, cilantro and tomatoes a good rinse.
  2. Finely chop 1/2 English cucumber, 2 Roma tomatoes, 1/4 red onion, and the flesh of 2 3 avocados. (I used 3 smaller avocados).
  3. Add to a mixing bowl along with 3/4 teaspoon salt and some freshly cracked black pepper. Combine well and take a taste. This will give you an idea of how much dressing you'll need.
  4. Add 2 3 tablespoons Lime Cilantro Dressing (or more) and mix well.
  5. Top with a sprinkling of Cotija cheese and freshly chopped cilantro. Serve immediately.
  6. For the Lime Cilantro Dressing, add 1/4 cup olive oil to a blender or food processor along with the juice of 1 lime, 1/2 jalapeno pepper, 1 garlic clove, 10 15 sprigs cilantro, 1/2 teaspoon salt, and some freshly cracked black pepper. Combine well.
