Ingredients
- avocados
- 1/2 English cucumber
- Roma tomatoes
- 1/4 red onion
- 1/4 teaspoon salt (plus more to taste)
- freshly cracked black pepper
- Cotija cheese (or Feta)
- freshly chopped cilantro (for garnish)
- 1/4 cup olive oil
- juice of 1 lime (1 tablespoon+)
- 1/2 jalapeno pepper
- garlic clove
- sprigscilantro
- 1/2 teaspoon salt
- freshly cracked black pepper
Instructions
- Give the cucumber, cilantro and tomatoes a good rinse.
- Finely chop 1/2 English cucumber, 2 Roma tomatoes, 1/4 red onion, and the flesh of 2 3 avocados. (I used 3 smaller avocados).
- Add to a mixing bowl along with 3/4 teaspoon salt and some freshly cracked black pepper. Combine well and take a taste. This will give you an idea of how much dressing you'll need.
- Add 2 3 tablespoons Lime Cilantro Dressing (or more) and mix well.
- Top with a sprinkling of Cotija cheese and freshly chopped cilantro. Serve immediately.
- For the Lime Cilantro Dressing, add 1/4 cup olive oil to a blender or food processor along with the juice of 1 lime, 1/2 jalapeno pepper, 1 garlic clove, 10 15 sprigs cilantro, 1/2 teaspoon salt, and some freshly cracked black pepper. Combine well.
