Healthier Best Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup sweet potato puree
  • 1/2 cup white sugar
  • cup packed brown sugar
  • 1/2 cup orange juice
  • egg whites
  • teaspoon svanilla extra ct
  • teaspoon baking soda
  • teaspoon shot water
  • cup sall-purpose flour
  • cup ssemisweet chocolate chips
  • cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat butter, sweet potato, white sugar, brown sugar, and orange juice with an electric mixer in a large bowl until smooth.
  3. Add eggs whites one at a time, allowing each egg to blend into butter mixture before adding the next.
  4. Beat in vanilla extract.
  5. Dissolve baking soda in hot water in a small bowl.
  6. Add to sweet potato batter.
  7. Stir in flour, chocolate chips, and walnuts.
  8. Roll dough into walnut sized balls and place 2 inches apart onto ungreased baking sheets.
  9. Bake in preheated oven until edges are nicely browned, about 10 minutes.
