Waldorf Chicken Salad

Ingredients

  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 8-10 ounce cooked diced chicken breastabout 1 large breast
  • 2 stalk schopped celeryabout 1 cup
  • 1 chopped apple
  • 1 cup halved grapes
  • 1 cup toasted chopped walnuts
  • 6 leavesBoston lettuce

Instructions

  1. Place walnuts on a baking sheet and bake at 350 degrees Fahrenheit for 5 minutes. Cool.
  2. In a small bowl, mix ¼ cup plain Greek yogurt , ¼ cup mayonnaise , 1 tablespoon lemon juice , ½ teaspoon salt , and ¼ teaspoon fresh ground black pepper .
  3. In a large bowl, toss together 8 10 ounce cooked diced chicken breast , 2 stalks chopped celery , 1 chopped apple , 1 cup halved grapes , 1 cup toasted chopped walnuts , and the dressing. Spoon into 6 leaves Boston lettuce and serve immediately.
