Turkey, Cranberry, and Brie Monte Cristo Sandwiches

Turkey, Cranberry, and Brie Monte Cristo Sandwiches

Ingredients

  • 3 large eggs
  • 1/4 cup milk
  • 3 tablespoon sconfectioners' sugar , divided
  • 2 teaspoon svanilla extra ct
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon table salt
  • 8 slice sbrioche sandwich bread , lightly toasted
  • 1/4 cup cranberry sauce , plus extra for serving
  • 8 ounce sBrie (1 wheel), chilled, quart ered, rind removed, and each quart er slice d 1/4 inch thick
  • 8 ounce sthinly slice d leftover roast turkey or deli turkey
  • 3 tablespoon sDijon mustard
  • 4 tablespoon sunsalted butter , cut into four 1-tablespoon piece s, divided

Instructions

  1. Adjust oven rack to middle position and heat oven to 350 degrees. Whisk eggs, milk, 2 tablespoons sugar, vanilla, cinnamon, and salt together in 8 inch square baking dish. Set wire rack in rimmed baking sheet.
  2. Arrange toasted brioche in single layer on clean counter.
  3. Spread cranberry sauce evenly over 4 slices.
  4. Divide Brie slices into 4 equal portions and arrange evenly over cranberry sauce.
  5. Divide turkey into 4 equal portions and arrange over Brie, folding and bunching turkey as needed so slices don't lie flat.
  6. Spread mustard evenly over remaining 4 slices brioche and place on top of turkey, mustard side down.
  7. Melt 1 tablespoon butter in 12 inch nonstick skillet over medium heat.
  8. Using both your hands, briefly dip each side of 2 sandwiches in egg mixture, allowing excess egg mixture to drip off, then place in skillet.
  9. Cook sandwiches until deep golden brown on first side, 3 to 5 minutes.
  10. Flip sandwiches; add 1 tablespoon butter to skillet; and continue to cook, tilting pan to distribute butter evenly, until second side is deep golden brown, 3 to 5 minutes longer.
  11. Transfer sandwiches to prepared rack.
  12. Repeat dipping and cooking with remaining 2 sandwiches. (Second pair of sandwiches will cook faster than first.)
  13. Bake all 4 sandwiches until Brie is fully melted, about 5 minutes. Remove sandwiches from oven. Using fine mesh strainer, dust sandwiches evenly with remaining 1 tablespoon sugar. Using serrated knife, cut sandwiches in half diagonally. Serve warm with extra cranberry sauce.
