Adobo Fried Chicken

Ingredients

  • tablespoon sfresh lemon juice
  • tablespoon smaple syrup
  • tablespoon sfish sauce
  • tablespoon soy sauce
  • fresh Thai bird or habanero chilesthinly slice d
  • 3/4 cup water
  • 1/2 cup sdistilled white vinegar
  • garlic clove sfinely minced
  • bay leaves
  • 1/2 teaspoon sblack peppercorns
  • teaspoon sugar
  • 1/4 cup soy sauce
  • 1/2 teaspoon red pepper flakes
  • teaspoon salt
  • 1/2 cup swater
  • pound schicken piece swith skinthighs and/or drumsticks, plus wings if desired - avoid breasts
  • Salt to taste
  • cup sbuttermilk
  • cup all-purpose flour
  • teaspoon paprika
  • 1/2 teaspoon black pepper
  • teaspoon saltfor flour mixture
  • About 8 cup speanut oil for frying

Instructions

  1. In a small bowl, combine lemon juice, maple syrup, fish sauce, soy sauce, and sliced chiles with ¾ cup water.
  2. Stir well to incorporate all ingredients.
  3. Cover and refrigerate until ready to serve, allowing flavors to meld.
