Cheesy Sausage and Potato Breakfast Casserole

Ingredients

  • 1/2 pound spotatoes, peeled
  • cooking spray
  • (16 ounce) packagepork breakfast sausage
  • sweet onion, chopped
  • large eggs
  • (8 ounce) packageCheddar cheese, grated, divided
  • 1/2 cup milk
  • salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Prick potatoes several times with a fork and place onto a baking sheet.
  3. Bake in the preheated oven until potatoes are soft, 50 to 60 minutes. Remove potatoes from the oven and let cool until safe to handle, at least 15 minutes.
  4. Reduce oven temperature to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  5. Heat a large skillet over medium high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a medium bowl. Sauté onion in the same skillet until translucent, about 5 minutes. Transfer onion to cooked sausage in the bowl.
  6. Add eggs, 1/2 of the Cheddar cheese, milk, salt, and pepper to sausage onion mixture in the bowl. Mix until well combined.
  7. Grate potatoes and add to egg mixture in the bowl. Stir until evenly incorporated, then pour into the prepared dish. Sprinkle remaining Cheddar cheese on top.
  8. Bake in the preheated oven until heated through and cheese is melted and bubbly, about 35 minutes.

Tips

Turkey sausage can be substituted for pork sausage.
