Ingredients
- 1/2 pound spotatoes, peeled
- cooking spray
- (16 ounce) packagepork breakfast sausage
- sweet onion, chopped
- large eggs
- (8 ounce) packageCheddar cheese, grated, divided
- 1/2 cup milk
- salt and ground black pepper to taste
Instructions
- Preheat the oven to 450 degrees F (230 degrees C).
- Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are soft, 50 to 60 minutes. Remove potatoes from the oven and let cool until safe to handle, at least 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Heat a large skillet over medium high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a medium bowl. Sauté onion in the same skillet until translucent, about 5 minutes. Transfer onion to cooked sausage in the bowl.
- Add eggs, 1/2 of the Cheddar cheese, milk, salt, and pepper to sausage onion mixture in the bowl. Mix until well combined.
- Grate potatoes and add to egg mixture in the bowl. Stir until evenly incorporated, then pour into the prepared dish. Sprinkle remaining Cheddar cheese on top.
- Bake in the preheated oven until heated through and cheese is melted and bubbly, about 35 minutes.
Tips
Turkey sausage can be substituted for pork sausage.
