Ingredients
- 1/3 cup sbrown rice flour
- 2/3 cup sorghum flour
- 1/4 cup dark cocoa powder
- teaspoon sbaking powder
- teaspoon ground cinnamon
- cup sshredded zucchini
- cup soy milk
- 1/2 cup water
- large eggs, beaten
- 1/4 cup vegetable oil
- 1/4 cup honey
- cooking spray
Instructions
- Preheat a waffle iron according to manufacturer instructions.
- Combine brown rice flour, sorghum flour, dark cocoa powder, baking powder, and cinnamon in a bowl.
- Whisk zucchini, soy milk, water, eggs, oil, and honey together in a large bowl; whisk in flour mixture until batter is evenly moistened.
- Coat the preheated waffle iron with cooking spray. Ladle 1 cup batter into the waffle iron, close the lid, and cook until crispy brown, about 5 minutes. Repeat with remaining batter, coating with cooking spray between batches.
