Gluten-Free Chocolate Zucchini Waffles

Ingredients

  • 1/3 cup sbrown rice flour
  • 2/3 cup sorghum flour
  • 1/4 cup dark cocoa powder
  • teaspoon sbaking powder
  • teaspoon ground cinnamon
  • cup sshredded zucchini
  • cup soy milk
  • 1/2 cup water
  • large eggs, beaten
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • cooking spray

Instructions

  1. Preheat a waffle iron according to manufacturer instructions.
  2. Combine brown rice flour, sorghum flour, dark cocoa powder, baking powder, and cinnamon in a bowl.
  3. Whisk zucchini, soy milk, water, eggs, oil, and honey together in a large bowl; whisk in flour mixture until batter is evenly moistened.
  4. Coat the preheated waffle iron with cooking spray. Ladle 1 cup batter into the waffle iron, close the lid, and cook until crispy brown, about 5 minutes. Repeat with remaining batter, coating with cooking spray between batches.
