Creamy Coconut-Banana Oatmeal

Ingredients

  • 3/4 cup milk
  • 1/2 cup quick-cooking oatmeal
  • 1/2 medium banana, mashed
  • 1/4 cup coconut milk
  • 1/4 cup shredded coconut
  • teaspoon white sugar, or to taste

Instructions

  1. Combine milk and oats in a microwave safe bowl. Cook in the microwave until oatmeal starts to bulge at the top and has a smooth, creamy consistency, 1 to 3 minutes.
  2. Mix in banana, coconut milk, and shredded coconut until well combined. Sweeten with sugar to taste.

Tips

The cook time in the microwave varies. For newer, more powerful microwaves, it takes usually 1 minute. For lower-watt microwaves, it can take up to 3 minutes. If oatmeal is too watery after microwaving, cook for a little longer. If it is overdone, you can always add extra milk.
