Jansson's Temptation (Janssons Frestelse)

Ingredients

  • large onions, cut into 1/4-inch-wide strips
  • fillets Swedish anchovies, or regular anchovies
  • potatoes, peeled and cut into strips
  • 1/2 cup sheavy cream
  • tablespoon sdry bread crumbs
  • tablespoon unsaltedbutter, melted

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Butter a 9x13 inch baking dish.
  2. Spread onions onto the bottom of the prepared baking dish; spread anchovies on top, followed by potatoes. Pour in heavy cream.
  3. Combine bread crumbs and melted butter; sprinkle over potatoes. Place baking dish onto a baking sheet.
  4. Bake in the preheated oven until potatoes softened, cream reduced, and casserole turns deep golden brown, about 45 minutes.
