Cinnamon Pork Chops with Green Beans and Tomatoes

Ingredients

  • teaspoon cinnamon
  • teaspoon ground cumin
  • teaspoon salt
  • 1/2 teaspoon ground black pepper, or to taste
  • boneless pork chops, about 3/4-inch thick
  • tablespoon vegetable oil, or more to taste
  • onion, thinly slice d
  • clove sgarlic, minced
  • pound fresh green beans, trimmed
  • large tomatoes, diced
  • 1/2 cup chicken broth

Instructions

  1. Mix cinnamon, cumin, salt, and pepper together in a bowl. Sprinkle mixture over both sides of pork chops.
  2. Heat oil in a large pan over medium heat. Add pork chops and brown, 3 to 4 minutes per side. Transfer pork chops to a plate. Add onion and cook until translucent, about 2 minutes. Stir in garlic and cook 30 to 60 seconds. Mix in green beans and cook, stirring occasionally, another 2 minutes. Add tomatoes and chicken broth and bring mixture to a simmer, about 5 minutes.
  3. Return pork chops to pan, cover, and reduce heat to low. Cook until pork chops are not longer pink in the center and an instant read thermometer inserted into the center reads 145 degrees F (63 degrees C), 15 to 20 minutes. Season with salt and pepper before serving.

Tips

You can use a 14.5 oz can of diced tomatoes in place of the fresh ones, if preferred.
