Ingredients
- 2 diced avocados
- 1 slice d English cucumber
- 3 diced Roma tomatoes
- 1/4 cup slice d red onion
- 1 cup arugula
- 2 tablespoon solive oil
- 2 tablespoon slemon juice
- salt and pepper
- 1/4 cup feta cheese
Instructions
- In a large bowl, combine 2 diced avocados , 1 sliced English cucumber , 3 diced Roma tomatoes , ¼ cup sliced red onion , and 1 cup arugula . Gently toss.
- In a small bowl, whisk the 2 tablespoons olive oil , and 2 tablespoons lemon juice . Add to the veggies and toss.
- Season with salt and pepper , and top with crumbled ¼ cup feta cheese .
