Creamy Fauxtato Salad

Ingredients

  • head cauliflower, cut into bite-sized piece s
  • stalk scelery, slice d
  • medium green bell pepper, chopped
  • 1/3 cup finely chopped onion, or more to taste
  • 1/4 cup smayonnaise (such as Duke's)
  • tablespoon vinegar
  • tablespoon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • hard-boiled eggs, peeled and chopped

Instructions

  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer; bring water to a boil. Add cauliflower; cover and steam until tender, about 7 minutes. Immediately rinse with cold water; set aside to cool.
  2. Combine celery, bell pepper, and onion in a large bowl; stir in mayonnaise, vinegar, mustard, salt, and black pepper. Lightly toss in cauliflower and eggs until well combined.
  3. Cover the bowl with plastic wrap; chill in the refrigerator until flavors meld, 6 to 24 hours.
