Creamless Creamy Herb Dressing

Creamless Creamy Herb Dressing

Ingredients

  • 1 cup raw cashews
  • 3/4 cup water , plus extra as needed
  • 3 tablespoon scider vinegar
  • 1 1/4 teaspoon ssalt
  • 1 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon garlic powder
  • 2 tablespoon sminced fresh chives
  • 1 tablespoon minced fresh parsley
  • 1/2 teaspoon pepper

Instructions

  1. Process cashews in blender on low speed to consistency of fine gravel mixed with sand, 10 to 15 seconds. Add water, vinegar, salt, onion powder, sugar, and garlic powder and process on low speed until combined, about 5 seconds. Let mixture sit for 15 minutes.
  2. Process on low speed until all ingredients are well blended, about 1 minute.
  3. Scrape down blender jar.
  4. Process on high speed until dressing is smooth and creamy, 3 to 4 minutes.
  5. Transfer dressing to bowl.
  6. Cover and refrigerate until cold, about 45 minutes.
  7. Stir in chives, parsley, and pepper.
  8. Thin with extra water, adding 1 tablespoon at a time, if desired.
  9. Dressing can be refrigerated for up to 1 week.
