Slow Cooker White Bean Chicken Chili

Ingredients

  • tablespoon olive oil
  • medium Spanish onions, chopped
  • tablespoon ground cumin
  • tablespoon dried oregano
  • teaspoon sground paprika
  • teaspoon skosher salt
  • teaspoon sblack pepper
  • teaspoon chili powder
  • tablespoon chopped garlic
  • (4 ounce) can schopped green chile peppers
  • 1/2 cup stomatillo salsa
  • cup schicken stock
  • pound cubed skinless, boneless chicken
  • (15 ounce) can swhite beans, drained
  • (15.25 ounce) can ssweet corn, drained
  • (12 fluid ounce) can or bottlebeer
  • bunch cilantro, stemmed and roughly chopped

Instructions

  1. Heat oil in a skillet over medium heat. Add onion, cumin, oregano, paprika, salt, pepper, and chili powder; saute until onion is translucent, 5 to 7 minutes. Add garlic; cook and stir until fragrant, about 1 minute. Transfer onion mixture to a slow cooker.
  2. Add chicken stock, chicken, beans, corn, beer, and cilantro. Cover and cook on Low for 6 hours or High for 2 hours.
