Chinese Beef Salad

Chinese Beef Salad

Ingredients

  • cup homemade braised beef shank, thinly slice d (or roast beef deli meat)
  • stalk Chinese celery, thinly slice d (or 1/2 stalk regular celery, diced)
  • green onion, thinly slice d
  • birds eye chilis, slice d (Optional)
  • 1/4 cup cilantro, chopped
  • tablespoon peanuts, chopped
  • to 3 tablespoon shomemade chili oil
  • teaspoon slight soy sauce
  • teaspoon Chinkiang vinegar
  • tablespoon broth from homemade braised beef shank, heated up in the microwave (Optional) (*Footnote 1)

Instructions

  1. Combine the dressing ingredients in a small bowl, stir, and set aside.
  2. Add to a bowl the beef shank, celery, green onion, chilis, and half of the cilantro and peanuts. Drizzle the dressing onto it and gently toss.
  3. Plate the salad, drizzle with some extra chili oil if desired, and garnish with the remaining cilantro and peanuts.
