Thai Sticky Black Rice Pudding

Ingredients

  • 1/2 cup swater
  • cup black rice
  • 3/4 teaspoon salt
  • cup unsweetened coconut milk
  • 1/2 cup white sugar

Instructions

  1. Combine water, black rice, and salt in a saucepan; bring to a boil. Reduce heat; cover and simmer for 40 minutes.
  2. Stir in coconut milk and sugar; bring to a boil. Reduce heat; simmer, uncovered, until rice reaches a sticky consistency, about 30 minutes.
  3. Cool. Stir and serve.
