Vegan Tofu Scramble Breakfast Sandwiches

Ingredients

  • tablespoon svegetable oil
  • (12 ounce) packagefirm tofu, drained
  • 3/4 cup can ned fire-roasted tomatoes, drained
  • medium red bell pepper, diced
  • 1/2 medium yellow onion, diced
  • clove sgarlic, minced
  • 1/2 tablespoon snutritional yeast
  • 1/2 tablespoon ssoy sauce
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground turmeric
  • pinch salt to taste
  • tablespoon vegan mayonnaise, or to taste
  • sandwich buns, split
  • cup fresh spinach
  • avocado, slice d

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Crumble tofu into roughly 1 inch pieces and add to the pan.
  3. Cook, stirring occasionally, for 5 minutes.
  4. Add canned tomatoes and cook until excess liquid has evaporated, 5 to 10 minutes.
  5. Add bell pepper and onion and cook until onion is translucent, about 5 minutes.
  6. Add garlic, nutritional yeast, soy sauce, red pepper flakes, paprika, turmeric, and salt.
  7. Cook and stir for 2 minutes more.
  8. Spread mayonnaise over sandwich buns and top with tofu mixture, spinach, and avocado.

Tips

Serve on English muffins if preferred.
