Ingredients
- 4 large bananas(\1 1/2 cup smashed bananas)
- \1 1/2 cup swhole wheat flour
- 2 teaspoon sbaking powder
- 2 tablespoon sbrown sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extra ct
- Oil for deep frying
Instructions
- Mash bananas with a spoon or puree them in a food processor or blender.
- In a medium bowl, mix the mashed bananas, whole wheat flour, sugar, baking powder, and salt. Mix well to the consistency of a creamy batter.
- Finally, add the nutmeg and vanilla. Let it rest for 10 minutes.
- Heat a large cast iron skillet with oil ½ inch deep on medium high heat (375℉/190℃) until hot but not smoking.
- Scoop up the batter and fry in batches, turning once, until golden brown (about 5 minutes). Don't overcrowd the pan, as it will cause the fritters to become soggy and absorb excess oil.
- Remove the fritters with a slotted spoon and drain them on paper towels.
- Serve warm.
