Whole Wheat Accra Bananas (Deep Fried Bananas Fritters)

Ingredients

  • 4 large bananas(\1 1/2 cup smashed bananas)
  • \1 1/2 cup swhole wheat flour
  • 2 teaspoon sbaking powder
  • 2 tablespoon sbrown sugar
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extra ct
  • Oil for deep frying

Instructions

  1. Mash bananas with a spoon or puree them in a food processor or blender.
  2. In a medium bowl, mix the mashed bananas, whole wheat flour, sugar, baking powder, and salt. Mix well to the consistency of a creamy batter.
  3. Finally, add the nutmeg and vanilla. Let it rest for 10 minutes.
  4. Heat a large cast iron skillet with oil ½ inch deep on medium high heat (375℉/190℃) until hot but not smoking.
  5. Scoop up the batter and fry in batches, turning once, until golden brown (about 5 minutes). Don't overcrowd the pan, as it will cause the fritters to become soggy and absorb excess oil.
  6. Remove the fritters with a slotted spoon and drain them on paper towels.
  7. Serve warm.
