Avocado Tomato Salad with Quinoa

Ingredients

  • Salad:
  • medium tomatoes, chopped
  • medium avocados, chopped
  • stalk scelery, diced
  • stalk sgreen onions, diced
  • 1/2 cup cooked quinoa, or more to taste
  • tablespoon schopped fresh cilantro, or more to taste
  • tablespoon slemon juice
  • teaspoon agave syrup
  • 1/2 teaspoon soy sauce
  • salt and ground black pepper to taste

Instructions

  1. Combine tomatoes, avocados, celery, green onions, cooked quinoa, and cilantro for salad in a bowl.
  2. Mix lemon juice, agave, soy sauce, salt, and pepper together in a small bowl. Pour over salad and toss to coat.
  3. Serve immediately or store in the refrigerator for up to 48 hours. After that the avocados get a bit mushy!
