Apple Butter Spice Cake

Ingredients

  • cup packed brown sugar
  • 1/2 cup chopped pecans
  • teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • cup sall-purpose flour
  • teaspoon baking powder
  • teaspoon baking soda
  • 1/2 teaspoon salt
  • cup white sugar
  • 1/2 cup butter, room temperature
  • large eggs, room temperature
  • 3/4 cup apple butter
  • 1/2 cup whole bran cereal or wheat germ
  • teaspoon vanilla extra ct
  • cup sour cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Make topping: Mix brown sugar, pecans, cinnamon, and nutmeg together in a small bowl until well combined. Set aside.
  3. Make cake: Sift flour, baking powder, baking soda, and salt into a medium bowl. Set aside.
  4. Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Add eggs one at a time, mixing well after each addition. Add apple butter, bran cereal, and vanilla; stir until incorporated. Add flour mixture alternately with sour cream, mixing well after each addition.
  5. Pour 1/2 of the batter into the prepared baking dish; sprinkle with 1/2 of the topping. Cover with remaining batter and sprinkle with remaining topping.
  6. Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, about 40 minutes.
