Ingredients

  • 1/2 cup scooked rice, preferably brown
  • pound skinless, boneless chicken breast, cut in bite-sized piece s
  • (14.5 ounce) can sno-salt-added tomatoes, diced or crushed
  • (15 ounce) can no-salt-added black beans, drained and rinsed
  • cup frozen yellow corn kernels
  • cup chopped red bell pepper
  • cup chopped poblano pepper
  • tablespoon chili powder
  • tablespoon cumin
  • garlic clove s, crushed
  • cup shredded reduced-fat Monterey Jack cheese
  • 1/4 cup jalapeno pepper slice s (Optional)

Instructions
