Chicken And Bacon Quesadilla

Ingredients

  • 1 cup chicken, cut into small piece sand season with salt and pepper
  • 4 slice sbacon, cut into small piece s
  • 2 bell pepper, cut into small piece s
  • 2 tablespoon sranch dressing (or any creamy dressing)
  • 4 flour tortillas
  • 2 cup shredded cheddar cheese
  • 2 cup shredded mozzarella cheese

Instructions

  1. Heat a frying pan over medium heat and add the chicken, bacon, and bell pepper. Stir fry for 5 to 8 minutes, or until the chicken is cooked through and no longer pink. Transfer to a bowl, add ranch dressing, and stir well to coat the ingredients evenly.
  2. Place a tortilla in a nonstick frying pan and sprinkle 1/2 cup of shredded cheddar and mozzarella cheese on it. Layer with the chicken and bacon mixture and another 1/2 cup of shredded cheese. Finally, cover with another tortilla.
  3. Cook over medium heat for 3 to 4 minutes with the lid covered, then flip and cook the other side for an additional 3 to 4 minutes, until the bottom of the quesadilla is golden brown and the cheese is melted in the center. (Repeat the same process for the second quesadilla.)
  4. Dish out and serve with additional ranch dressing on top, if desired.
