Pulled Pork Nachos with Sriracha Slaw

Ingredients

  • 3/4 cup water
  • 1/4 cup apple cider vinegar
  • tablespoon sSriracha sauce
  • teaspoon swhite sugar
  • teaspoon dried oregano
  • teaspoon salt
  • (14 ounce) packageclassic coleslaw mix (such as Dole)
  • 1/2 small red onion, thinly slice d
  • (12 ounce) bagtortilla chips
  • cup scooked pulled pork
  • cup sshredded Cheddar cheese

Instructions

  1. Combine water, vinegar, Sriracha, sugar, oregano, and salt in a saucepan; bring to a boil. Off heat, stir; cool for 10 minutes.
  2. Meanwhile, combine coleslaw and onion in a large bowl; pour Sriracha mixture on top. Stir; set aside while preparing nachos.
  3. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler on low setting.
  4. Spread tortilla chips on a baking sheet; scatter pulled pork on top and top with cheese.
  5. Broil nachos in the preheated oven until cheese is melted, about 6 minutes. Top with Sriracha slaw.

Tips

If you are using pulled pork that isn't smoked, you may want to mix it with a little bit of barbecue sauce to get that smoky flavor, or add a few drops of liquid smoke.
