Ingredients
- tablespoon svegetable oil
- teaspoon ssalt-free herb seasoning
- teaspoon sground paprika
- teaspoon salt
- (1 pound) flank steak, thinly slice d against the grain
- (14.5 ounce) can diced tomatoes, undrained
- (8 ounce) packagesliced mushrooms
- medium onion, thinly slice d
- medium green bell pepper, thinly slice d
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Combine oil, herb seasoning, paprika, and salt in a 9x13 inch baking pan. Add steak slices, undrained tomatoes, mushrooms, onion, and bell pepper; stir to combine.
- Bake in the preheated oven, uncovered, until vegetables are tender and steak is cooked through, about 25 minutes.
Tips
Flank steak is easier to slice if you first put it in the freezer for about 25 minutes. You can slice the steak and mushrooms the day before and store them in resealable plastic bags in the refrigerator. If you want it to look jazzier, add some sliced red bell pepper or corn kernels.
