Smashed Cucumber Salad

Ingredients

  • 3 fresh Persian cucumbers
  • 3 teaspoon slow-sodium soy sauce
  • 5 tablespoon sChinese black vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon spicy chili crisp, or chili oil
  • 1 tablespoon sesame oil
  • 1/2 tablespoon roasted sesame seeds
  • salt to taste
  • 2 clove sgarlic, minced
  • 1 stalk scallion, chopped
  • 2 red Thai pepper, chopped
  • 3 stalk cilantro, chopped

Instructions

  1. Wash and slice off the ends of the cucumbers on a cutting board. Place the side of the knife against the cucumber and gently smash it with your palm until it splits. Then, cut into 1/2 inch (1 cm) thick pieces and transfer them to a large bowl.
  2. Prepare the salad dressing by combining soy sauce, vinegar, sugar, spicy chili crisp, sesame oil, roasted sesame seeds, and salt in a small bowl. Stir until the sugar and salt are dissolved, then set aside.
  3. Top the smashed cucumber pieces in a large bowl with minced garlic, chopped scallions, red Thai pepper, and chopped cilantro. Toss well with the prepared salad dressing.
  4. Transfer to a serving dish and serve immediately.
