Curried Chicken

Ingredients

  • wholechicken, cut into 8 piece sand skin removed
  • salt and ground black pepper to taste
  • tablespoon paprika, or to taste
  • tablespoon butter
  • apple, cored and chopped
  • onion, chopped
  • tablespoon curry powder, or more to taste
  • (10.75 ounce) can cream of mushroom soup
  • cup half-and-half cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Arrange chicken pieces in a single layer in a 9x13 inch baking dish. Season chicken liberally with salt, pepper, and paprika; set aside.
  3. Melt butter in a large skillet over medium heat. Add apple and onion to hot butter, season with curry powder, and cook and stir until apple and onion are tender, 7 to 10 minutes. Stir in condensed soup and half and half until completely combined; spoon over chicken pieces in the baking dish.
  4. Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 75 minutes. An instant read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
