Asari Miso Soup (Miso Soup with Clams)

Ingredients

  • 3-4 cup swater
  • 1/2 blocksoft tofu, cut into small cubes
  • 2 oz (60 g) buna shimeiji mushroom
  • 1/2 pound (250 g) manila clams
  • 2 tablespoon sdash i-flavored red miso paste, or white miso paste
  • scallions, chopped

Instructions

  1. Bring the water to a boil. Add the soft tofu and mushrooms, then add the clams. Boil for about 2 minutes, or until all the clams have opened.
  2. Turn off the heat and add the miso (do not boil the miso). Stir with chopsticks or a ladle until dissolved. Top with the chopped scallions and serve hot with steamed rice.
