Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
Add 4 cups old fashioned oats , 1 cup sliced almonds , 1 cups shelled pumpkin seeds , ½ cup shredded coconut , 2 tablespoons ground cinnamon , and 1 teaspoon salt to a medium bowl and mix until combined.
Add ½ cup olive oil , ½ cup maple syrup , and ¼ cup peanut butter to a small bowl and whisk to combine. Pour over the oat mixture and mix until evenly incorporated.
Spread the granola evenly on the baking sheet. Bake for 20 25 minutes until golden brown, stirring it halfway through the baking time.
Remove the granola from the oven and let it cool completely before breaking it up and stirring in ½ cup dried cranberries .
