Black Beans and Rice

Ingredients

  • teaspoon olive oil
  • onion, chopped
  • 3/4 cup uncooked white rice
  • clove sgarlic, minced
  • teaspoon salt (optional)
  • teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup slow sodium, low fat vegetable broth
  • 1/2 cup scan ned black beans, drained

Instructions

  2. Heat oil in a saucepan over medium high heat. Add onion; cook and stir until onion has softened, about 3 minutes. Dotdash Meredith Food Studios
  3. Add rice, garlic, salt, cumin, and cayenne. Cook and stir for 2 to 3 minutes to lightly toast the rice and warm the spices until fragrant. Dotdash Meredith Food Studios
  4. Add vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer until liquid is absorbed and rice is tender, about 20 minutes. Dotdash Meredith Food Studios
