Farro Salad with Feta

Farro Salad with Feta

Ingredients

  • 2 cup scooked farro
  • 1 cup cucumberdiced
  • 1 cup chickpeascanned, drained then rinsed
  • 1/2 cup roasted red peppersdiced
  • 1/4 cup red onionfinely chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup kalamata olivessliced
  • 1/4 cup parsleychopped
  • 6 tablespoon solive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Place the farro, cucumbers, chickpeas, roasted peppers, red onion, feta cheese, olives and parsley in a large bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano and salt and pepper.
  3. Pour the dressing over the farro mixture. Toss to coat, then serve
