Ingredients
- cup cottage cheese
- large eggs
- 1/4 cup milk
- 1/4 cup brown sugar
- 1/2 cup flour
- tsp baking soda
- tsp vanilla extra ct
- oil or butter, for greasing the skillet pan
- optional add-ins, such as banana, strawberries, blueberries, and/or chocolate chips
Instructions
- Into a large mixing bowl, whisk together cottage cheese, eggs, milk, brown sugar, and vanilla extract until fully combined.
- Slowly add in the flour and baking soda and mix until well combined. Fold in your add in if using.
- Heat a non stick skillet over medium heat and lightly coat with olive oil or butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1 2 minutes until golden brown. Repeat with the remaining batter.
- Serve the pancakes warm with your favorite toppings. Enjoy!
