Irish Potato and Chive Casserole

Ingredients

  • potatoes, peeled and cubed
  • (8 ounce) packagecream cheese
  • (8 ounce) containersour cream
  • 1/2 cup butter, cut into piece s
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh chives
  • pinch paprika, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place potatoes into a large pot of water. Bring to a boil, then reduce the heat to medium low, cover, and simmer until tender, about 20 minutes. Drain.
  3. Combine hot potatoes, cream cheese, sour cream, butter, and salt in a large bowl; mash until creamy. Spoon potato mixture into a 2 quart casserole dish. Sprinkle with chives and paprika.
  4. Bake in the preheated oven until bubbling, about 30 minutes.
