- potatoes, peeled and cubed
- (8 ounce) packagecream cheese
- (8 ounce) containersour cream
- 1/2 cup butter, cut into piece s
- 1/2 teaspoon salt
- 1/4 cup chopped fresh chives
- pinch paprika, or more to taste
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Place potatoes into a large pot of water. Bring to a boil, then reduce the heat to medium low, cover, and simmer until tender, about 20 minutes. Drain.
- Combine hot potatoes, cream cheese, sour cream, butter, and salt in a large bowl; mash until creamy. Spoon potato mixture into a 2 quart casserole dish. Sprinkle with chives and paprika.
- Bake in the preheated oven until bubbling, about 30 minutes.
