Coconut Milk Pancake

Ingredients

  • 1/4 cup sall-purpose flour
  • 1/2 tablespoon swhite sugar
  • teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • (14 ounce) can coconut milk, well shaken
  • egg, beaten
  • tablespoon unsaltedbutter, melted
  • teaspoon vanilla extra ct

Instructions

  1. Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Whisk coconut milk, egg, butter, and vanilla extract together in a separate bowl; stir into flour mixture just until batter combined.
  2. Heat a lightly oiled griddle over medium high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.
