Most recipes for Parmesan mashed potatoes simply stir grated cheese into the potatoes either before or after mashing. But we wanted big Parmesan flavor without sacrificing creamy texture.

Ingredients
- 4 pound sYukon Gold potatoes , peeled and cut into 1-inch chunks
- 1 1/2 cup sheavy cream
- 6 tablespoon sunsalted butter , cut into piece s
- 2 cup sgrated Parmesan cheese
- 1/2 cup grated Asiago cheese
- 2 teaspoon ssalt
Instructions
- Bring potatoes and enough water to cover by 1 inch to boil in large pot over high heat. Reduce heat to medium and simmer until potatoes are tender, about 20 minutes.
- Heat cream, butter, cheeses, and salt in saucepan over medium heat, whisking until smooth, about 5 minutes. Keep warm.
- Drain potatoes and return to pot. Stir over low heat until potatoes are thoroughly dried, 1 to 2 minutes. Pour cream mixture over potatoes and mash with potato masher until evenly incorporated and creamy. Serve.
