Ham Mashed Potato Cakes

Ingredients

  • 4 cup smashed potatoes
  • 1/2 cup chopped ham
  • 2 cup sshredded Mozzarella
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1 deseeded and minced jalapeño
  • 2 teaspoon sminced garlic
  • 1/2 cup plain bread crumbs
  • 4-6 tablespoon sOil for shallow frying
  • Sour Cream or Mayonnaise for serving

Instructions

  1. In a large bowl add the 4 cups mashed potatoes , ½ cup chopped ham , 2 cups shredded Mozzarella , 1 egg , ¼ cup all purpose flour , 1 deseeded and minced jalapeño , and 2 teaspoons minced garlic .
  2. Stir the potato mixture together until well combined, the mixture should be thick and should hold its shape. If it's too loose, add a tablespoon of flour at a time (this will depend on the consistency of your mashed potatoes)
  3. Use an ice cream scoop to scoop out the mixture and form it into patties about ⅓ inch thickness. Coat each cake evenly in the ½ cup plain bread crumbs and set aside.
  4. Heat 4 6 tablespoons Oil for shallow frying in a pan over medium high heat and fry the patties in a single layer on each side for 3 4 minutes till golden brown on both sides.
  5. Serve hot with Sour Cream or Mayonnaise for serving .
