Zesty Cauliflower Antipasto Salad

Ingredients

  • medium head cauliflower, cut into small florets
  • small red onion, slice d
  • 1/2 cup Italian-style salad dressing
  • grape tomatoes, halved
  • (14 ounce) can quart ered artichoke hearts, drained
  • 1/2 cup slice d Kalamata olives
  • 1/2 cup mild banana pepper rings
  • ounce ssmall fresh mozzarella balls (such as BelGioioso®)
  • ounce sGenoa salami, chopped

Instructions

  1. Place cauliflower, onion, and salad dressing in a large bowl. Stir to coat. Cover and marinate for 30 minutes.
  2. Add tomatoes, artichoke hearts, olives, banana peppers, mozzarella balls, and salami; stir to combine.

Tips

You can use any Italian cured meat instead of Genoa salami, like mortadella or coppa.
