Ingredients
- medium head cauliflower, cut into small florets
- small red onion, slice d
- 1/2 cup Italian-style salad dressing
- grape tomatoes, halved
- (14 ounce) can quart ered artichoke hearts, drained
- 1/2 cup slice d Kalamata olives
- 1/2 cup mild banana pepper rings
- ounce ssmall fresh mozzarella balls (such as BelGioioso®)
- ounce sGenoa salami, chopped
Instructions
- Place cauliflower, onion, and salad dressing in a large bowl. Stir to coat. Cover and marinate for 30 minutes.
- Add tomatoes, artichoke hearts, olives, banana peppers, mozzarella balls, and salami; stir to combine.
Tips
You can use any Italian cured meat instead of Genoa salami, like mortadella or coppa.
